Magic in the Middle Cookies

Ingredients (makes 2 dozen cookies)

  • 1 1/2 c. flour
  • 1/2 c. unsweetened cocoa powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 c. granulated sugar, plus a little extra for rolling
  • 1/2 c. brown sugar, packed
  • 1 stick butter butter, softened
  • 1/4 c. creamy peanut butter
  • 1 tsp. vanilla extract
  • 1 egg
  • 1 egg yolk
  • 3/4 c. peanut butter (for filling)
  • 3/4 c. powdered sugar (for filling)
In your mixing bowl, throw in both sugars, the butter, and 1/4 c. of peanut butter. Mix all of that together till it’s nice and creamy and fluffy. Then add the vanilla and the egg and egg yolk. -- I made a double batch so I just added 3 eggs.--Beat the mixture to get everything nice and combined. In a medium bowl, whisk together the flour, cocoa, baking soda, and salt. Slowly add the dry mixture to the other mixture.

In a small bowl, stir together the 3/4 c. of peanut butter and the powdered sugar until nice and smooth.

Scoop out the chocolate dough and make an indent in the dough. Place a smaller ball of the filling in the middle and smooth chocolate dough up over the top of the peanut butter filling so that none of the filling shows. Cover dough in white sugar and place on cookie sheet. Press down with a glass and back at 375 degrees for 7 to 9 minutes.
