Baked Creamy Chicken Taquitos


1/3 C (3 oz) cream cheese
1/4 C green salsa
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic, or garlic powder
3 T chopped cilantro
2 T sliced green onions
2 C shredded cooked chicken
1 C grated pepperjack cheese

small corn tortillas (and actually, flour ones are really good as well)
kosher salt
cooking spray

Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.

Heat cream cheese in the microwave for about 20-30 seconds so it’s soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.

Roll 2-3 Tbs of the chicken mixture in a tortilla. Space them so that they are not touching and then spray with cooking spray and sprinkle on salt. Bake 15 to 20 minutes or until golden.

Magic in the Middle Cookies

Ingredients (makes 2 dozen cookies)

  • 1 1/2 c. flour
  • 1/2 c. unsweetened cocoa powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 c. granulated sugar, plus a little extra for rolling
  • 1/2 c. brown sugar, packed
  • 1 stick butter butter, softened
  • 1/4 c. creamy peanut butter
  • 1 tsp. vanilla extract
  • 1 egg
  • 1 egg yolk
  • 3/4 c. peanut butter (for filling)
  • 3/4 c. powdered sugar (for filling)
In your mixing bowl, throw in both sugars, the butter, and 1/4 c. of peanut butter. Mix all of that together till it’s nice and creamy and fluffy. Then add the vanilla and the egg and egg yolk. -- I made a double batch so I just added 3 eggs.--Beat the mixture to get everything nice and combined. In a medium bowl, whisk together the flour, cocoa, baking soda, and salt. Slowly add the dry mixture to the other mixture.

In a small bowl, stir together the 3/4 c. of peanut butter and the powdered sugar until nice and smooth.

Scoop out the chocolate dough and make an indent in the dough. Place a smaller ball of the filling in the middle and smooth chocolate dough up over the top of the peanut butter filling so that none of the filling shows. Cover dough in white sugar and place on cookie sheet. Press down with a glass and back at 375 degrees for 7 to 9 minutes.

Buttermilk Syrup

Bring to a boil in a LARGE pot:


  • 1/2 cup butter

  • 1 cup sugar

  • 1/2 cup buttermilk

  • 1 tsp corn syrup

Remove from heat and stir. Add:



  • 1 tsp baking soda

  • 1 tsp vanilla

This mixture will fizz to twice or 3 times the size. Let set stirring occasionally. Serve while hot.

Pumpkin Waffles


  • 2 cups flour

  • 2 Tbs baking powder

  • 1 Tbs cinnamon

  • 1 Tbsp sugar

  • 1/2 tsp nutmeg

  • 1/4 tsp salt

  • 4 eggs, seperated

  • 1 1/2 cups milk

  • 1 cup pumpkin

  • 3/4 cup melted butter

  • 1 Tbs vanilla

Combine flour, baking powder, cinnamon, sugar, nutmeg and salt in large bowl. Beat egg yolks slightly then add milk, pumkin, butter, and vanilla. Add to the flour mixture. Beat egg whites to stiff peaks and fold into pumpkin mixture. (can skip seperating eggs and beating if in a rush) Cook on waffle iron and serve with buttermilk syrup.

Wingers Sticky Fingers


  • 3 Tbs Frank's Hot Sauce (Holly's recipe says it must be Franks)

  • 3/4 cup brown sugar

  • 2 Tbs water

Combine and heat until sugar dissolves. Brush on cooked chicken strips. Can add ranch to make creamy sauce!

Baked Long Johns (doughnut)


  • 2 cups flour

  • 1/2 cup sugar

  • 2 tsp. baking powder

  • 1/2 tsp salt

  • 1/4 tsp ground cinnamon

  • 2 eggs

  • 3/4 cup milk

  • 1 Tbs butter, melted

  • 1 tsp vanilla extract

GLAZE:



  • 3/4 cup semisweet chocolate chips

  • 1 Tbs butter

  • 4 1/2 tsp milk

In a small bowl, combine the flour, sugar, baking powder, salt and cinnamon. In another bowl, whisk the eggs, milk , butter and vanilla. Stir into dry ingredients just until moistened. Transfer to eight 4 1/2 x 2 1/2 x 1 1/2 inch loaf pans coated with cooking spray. (I used muffin tins because I didn't have enough loaf pans...in made 1 dozen) Be sure to level the top. Bake at 325 for 18-22 minutes or until golden brown. Immediately remove from pans to a wire rack to cool completely. In a microwave, melt chocolate chips and butter. Add milk; stir until smooth. Dip tops of doughnuts in glaze. Return to wire rack; let stand until set.

Creamy Fruit Dip


  • 1 8oz brick cream cheese, at room temperature

  • 1/4 cup marshmallow fluff

  • 3 Tbs raspberry jam

Mix and blend thoroughly. Serve with fresh fruit!

Chicken Fajita Chowder


  • 1 lb chicken breast, chopped

  • 1 each medium green, red, and yellow peppers, chopped

  • 1 med onion, chopped

  • 2 Tbs olive oil

  • 3 cups water

  • 1 can corn, drained

  • 1 cup uncooked rice

  • 1 can green enchilada sauce

  • 1 can green chilis

  • 1/4 tsp salt

  • 1 cup shredded Mexican cheese

  • 1 cup sour cream

Cook chicken and veggies in oil until tender and done. Stir in water, corn, rice, sauce, chilis, and salt. Bring to boil and cover and cook on medium heat for 20 minutes. Remove from heat and add cheese and sour cream.

Whole Wheat Bread

This is Grandma Schwieder's Recipe! Yum!
2 1/2 cups VERY hot water
1/3 cup oil
1/3 cup honey
1 1/4 Tbs salt
2 1/2 cups whole wheat flour
1/4 cup dough enhancer (found at Prepared Pantry)
1/4 cup gluten flour (found at Prepared Pantry)
2 Tbs yeast
1/4 cup powdered milk
1 egg
1 1/2 additional wheat flour
1 1/2 white flour
Preheat oven to 400. Add all ingredients in the order listed except the additional flours (use the same measuring cup for the oil as the honey and the honey will just slip out!) Mix thoroughly. Slowly add the additional wheat and white flour until dough cleans side of the bowl. (Can add more white flour until correct consistancy). Knead on low for 10 minutes. Turn onto oiled surface and oil hands. Divide and shape into loaves. Let rise 30-60 minutes. Turn down oven to 325 right before putting in loaves. Bake for 30 minutes. Remove from pans immediately. Makes 3 medium size loaves.

Garlic Mashed Potatoes

6-8 med potatoes, cooked and drained
1/2 cube margarine
milk
1/2 cup Parmesan cheese
1-2 garlic cloves
Cook and mash potatoes like you would normally. Then add Parmesan cheese and garlic. May add some salt and pepper to taste if desired. Serve with Ranch Pork Chops! (or with anything else you like... :)

Ranch Pork Chops

4 boneless pork chops (about 1/2inch thick)
1 can Cream of Chicken soup
1 pkg ranch dressing mix
Brown pork chops in a little oil. Mix soup and dressing together then place both chops and soup in a crock pot. Cook on high for 2-3 hours or low for 4-5. Serve with garlic mashed potatoes! Delicious!

Chocolate Chip Cookies

I was at Grandma's house and she made my boys these wonderful cookies! She said it was just Mrs Fields cookie recipe, so I got online to see if I could find one and this is what I found.

1 c Butter (by the way I figure Grandma puts real butter in everything so I did to)
1/2 c sugar
1 1/2 c brown sugar
2 eggs
2 1/2 tsp vanilla
2 1/2 c flour
3/4 tsp salt
1 tsp baking powder
1 tsp baking soda
1 12oz bag chocolate chips

Bake at 350 degrees for 10 min.

So I have never seen Mrs Fields cookie recipe so I don't know if this is her actual recipe, but it was just as wonderful at the cookies grandma made.

Homemade Buttermilk Dressing

1 quart buttermilk
1 quart Best Foods real mayonnaise
1 tsp parsley, dried
1 tsp. Accent (opt.)
1 tsp onion salt
1 tsp garlic salt
1 tsp pepper
1 tsp dried or fresh onion

Mix all ingredients. I usually cut this recipe in half or fourths. Use Best Foods for the best result.

Serving size 2 Tbs. = 3 carbs

Parmasan Chicken

1 pkg chicken tenders
1/2 cube melted butter
1/2 cup grated mozzarella cheese
1/2 cup parmesan cheese
1/2-3/4 cup crushed corn flakes
1/2 tsp salt
1/4 tsp pepper
1 tsp lawry's seasoning salt

Preheat oven to 400. Mix cheeses, crubs and seasonings in bowl. Rinse chicken and dip in butter then into mixture. Place in a 9x13 pan sprayed with oil. Bake 25 minutes. You may need to cover for the last 10 minutes so it doesn't go too crispy.
